Creamy Chipotle Dressing

Tahini is the base of most of my salad dressings. It adds a creamy element, and stands in for oil. This dressing is so yummy...the chipotle can be spicy, so start by adding one, and add more to taste! I think you'll find yourself adding this to salads, tacos, rice bowls and more, because it is so flavorful and versatile. 

Creamy Chipotle Dressing
1 Tbsp tahini
2 tsp apple cider vinegar
1-2 tsp agave
1 chipotle (with 1-2 tsp adobo sauce)
3 roasted garlic cloves
3 garlic cloves
water (to thin)
salt
pepper

1. Wrap entire bulb of garlic in aluminum foil and bake in oven at 375 F for 20-25 minutes. Set aside to cool.
2. Add raw garlic, roasted garlic, and chipotle to mini food processor. Pulse.
3. Add tahini, vinegar, agave, salt, pepper, and a few tsps of water (if you want a thinner dressing)
4. Assemble the salad: lime wedge/cilantro/grape tomatoes/black beans/avocado/onion/oven roasted purple cauliflower/romaine
